Veggie Skillet
Now that we know how important #broccoli is to our health, how about a recipe that will not only make the broccoli taste delicious, will also camouflage some #asparagus into the mix and be able to be added in various ways?
We came up with this veggie #skillet , that we hope you will enjoy it as we do, and this recipe can be adapted to the veggies you have or you can make it just as it is.

Prep time: 15 min
Total time: 30 min
Ingredients:
3 #bacon strips, diced
2 tbsp of refined coconut oil (if not using bacon)
4 #asparagus, diced
1 cup #broccoli florets
2 tbsp chopped onions
2 tbsp diced red bell pepper or tomatoes
2 shitake #mushrooms, small diced
Salt & pepper to taste
Directions
1. Warm a medium skillet and start by browning the bacon until slightly crisp, if you decided to skip the bacon, add the refined coconut oil to sauté the veggies.
2. Add the onions and sauté for 1-2, until soft and fragrant. While the onions are cooking, add the asparagus and broccoli to the food processor and pulse until small little pieces. Pour the mix of asparagus and broccoli into the pan and cook for another minute, stirring occasionally.
3. Add the diced bell pepper and mushrooms, cook for another 2 minutes, or until all is cooked.
4. Adjust the seasoning to taste.
We #love this recipe because you can add to your eggs, on top of some grits, inside an omelet, with some rice, it could be a mix for an egg muffin, mixed into a tomato sauce and tossed with some noodles, or even by itself.
