Sumac Roasted Chicken

Sundays are for easy roasted chicken dinners with lots of flavor and little effort. All you need are a bunch of roast double veggies, fragrant herbs and powerhouse antioxidant spices. In this version, sumac leaves the show giving earthy nurse, tanginess and Your Highness. Added spices like turmeric, paprika and a pinch of saffron give a lot of nutritional value as well as round out the flavor. Recipe below…

 

Ingredients:
1 whole chicken, skin on optional
3 large carrots sliced on the bias
4 stalks celery sliced on the bias
1 large red onion chopped into very large pieces
1/2 lb Small potatoes of any Color, purple preferred, and cut in half
Several sprigs rosemary
Half cup ghee
2 tablespoons garlic crushed
1 tablespoon turmeric
2 teaspoon salt, or to taste
1 teaspoon pepper, or to taste.
1 tablespoon oregano
3 tablespoons sumac

Directions:
Preheat oven to 400°.
In a large oven-safe pot That can be covered, like a Dutch oven, add all of the vegetables to the bottom.
In a small mixing bowl, add and mix ghee and all spices.
Add 1/3 of spice mix to the vegetables.
Place the chicken on top of the vegetables and use the remaining spice mixture to cover all sides of the chicken, including the cavity. If your chicken has the skin on (preferred), add some of the spice mixture under the skin of the chicken breasts to keep it moist. If you do not have the skin on, roast the chicken back side up for the first half then flip over for the second half to ensure the chicken breasts stay moist.
Add rosemary sprigs to the cavity and among the vegetables
Roast the chicken covered for two hours covered then for 20 to 30 minutes uncovered depending upon the weight of the chicken. Enjoy!
