- 1 large spaghetti squash
- 1 tbsp refined coconut oil or regular coconut oil
- Salt to taste
- Preheat oven to 400 F. Cut the spaghetti squash in half lengthwise. Scoop out the seeds and rub the oil and salt.
- Lay the squash on baking sheet with cut side down. Roast for around 45 min (time will vary depending on the size of your squash) or till you can puncture with a fork.
- Let squash cool slightly and then use a fork to separate the “noodles”.
- Set aside.
