Quinoa Flour Pancakes

This yummy recipe will SURELY be on regular rotation in the house. As always, ALL of our recipes are gluten-free, anti-inflammatory, auto-immune-friendly and kid-and-adult-friendly.

Yield: 12 pancakes

 

Ingredients

  • 1 ¾ cup quinoa flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ¼ cup nondairy milk
  • 2 flax eggs (2 tbsp ground flax seed + 6 tbsp water = sit for 5 min)
    3 tbsp maple syrup
  • 1 tbsp coconut oil, melted and chilled
  • 1 tbsp apple cider vinegar
  • Pinch of cinnamon
  • Pinch of ground cloves
  • Pinch of turmeric

Directions

  1. Start by making the flax eggs, and let it sit as you get all the remaining ingredients together.
  2. Whisk together the dry ingredients.
  3. In a separate bowl, whisk together the wet ingredients. Allow to sit for 3 minutes.
  4. Pour the wet ingredients into the dry and stir to combine, until all smooth.
  5. Preheat a skillet over medium-low heat. Use a little cooking spray to grease it. Spoon ¼ cup batter onto the pan. Cook pancakes until bubbles begin to form, about 1-2 min, them flip and cook another 1-2 min.
