Quinoa Flour Pancakes
This yummy recipe will SURELY be on regular rotation in the house. As always, ALL of our recipes are gluten-free, anti-inflammatory, auto-immune-friendly and kid-and-adult-friendly.

Yield: 12 pancakes
Ingredients
- 1 ¾ cup quinoa flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 ¼ cup nondairy milk
- 2 flax eggs (2 tbsp ground flax seed + 6 tbsp water = sit for 5 min)
3 tbsp maple syrup - 1 tbsp coconut oil, melted and chilled
- 1 tbsp apple cider vinegar
- Pinch of cinnamon
- Pinch of ground cloves
- Pinch of turmeric
Directions
- Start by making the flax eggs, and let it sit as you get all the remaining ingredients together.
- Whisk together the dry ingredients.
- In a separate bowl, whisk together the wet ingredients. Allow to sit for 3 minutes.
- Pour the wet ingredients into the dry and stir to combine, until all smooth.
- Preheat a skillet over medium-low heat. Use a little cooking spray to grease it. Spoon ¼ cup batter onto the pan. Cook pancakes until bubbles begin to form, about 1-2 min, them flip and cook another 1-2 min.
