Quinoa- Basic
This #ancientgrain is getting more famous by the minute, even though that is called an “ancient grain’, it is actually a seed. We love working with #Quinoa because it’s super versatile and easy to prepare. This cute little seed is a powerhouse of nutrition, giving you tons of antioxidants, minerals, and a great source of #plantbasedprotein .
Here is our to-go recipe!
Yield: 4
Prep time: 5 min
Total time: 25 min
Ingredients
1 cup quinoa, rinsed
2 cups water, or any broth
1 tbsp refined coconut oil
¼ small onion, finely chopped
1-2 garlic clove, minced
1 bay leaf (optional)
Salt to taste
Directions
1. Heat a medium saucepan in medium-low. Add the refined coconut oil and sauté the onions for a few minutes until fragrant, add the minced garlic and stir for 15-30 seconds. Add the quinoa and stir for another 30 seconds.
2. Add the water or broth, adjust salt to taste, and add the bay leaf. Bring the liquid to a boil, and let it simmer for 15 min or until the water is all absorbed.
3. Fluff the quinoa with a fork and enjoy it.
Note that Quinoa freezes super good, and we really recommend to make a bigger batch so you can have it ready for future use.
