Pomegranate Scallops
We don’t know about you but we get bored with the same ole same ole scallop dishes. Adding a bit of pomegranate molasses gives a bright, beautiful and tangy finish!
Pomegranate Scallops
Ingredients:
10 large scallops, rinsed and dried
3 tbsp ghee (or refined coconut oil)
2 cloves garlic, crushed
1/8 tsp turmeric, optional
1/4 tsp salt (or to taste)
1/8 tsp pepper (or to taste)
2-3 tsp pomegranate molasses
Directions:
1. Salt, turmeric and pepper scallops on both sides. Set aside.
2. In shallow pan, add ghee and garlic on med-high heat. Sauté until translucent.
3. Place scallops evenly spaced in pan, and turn after 3 min. Sauté other side another 1 min while basting ghee/garlic on top.
4. Drizzle molasses and let caramelize for added 1 min and serve.
Boom. ** excellent served with mashed parsnips, potatoes, creamed or sautéed spinach!
