Peach Cobbler
This Peach Cobbler is a perfect blend of textures and extremely tasteful! Now to the recipe, shall we?!
Yield: 8
Prep time: 20 min
Total time: 1 hr 45 min
Ingredients
Filling:
6-8 ripe peaches (you can grill them if you wish, as like it better grilled)
¾ maple syrup
¼ cup fresh lemon juice
2 tbsp arrowroot powder
¼ tsp salt
2 tbsp vanilla extract
¼ tsp turmeric
¼ tsp cinnamon
Crust:
1 ½ cup almond flour
¼ cup cassava flour
1 tbsp baking power
¼ tsp salt
3 tbsp maple syrup
1 tbsp vanilla extract
¼ tsp turmeric
Directions
1. Preheat the oven to 400F
2. Let’s start by making the filling. Cut the peaches in half and pit them. Grill them for 5-8 min each side, until they are fragrant and juicy. If you can’t grill them, please bake the peaches for 8-10 min. Slice the peaches lengthwise and combine with the rest of the ingredients and set aside.
3. Now it’s time to make the crust: In a medium bowl, mix together the dry ingredients. In a large bowl, combine the maple syrup and vanilla extract, and little by little add the dry ingredients into the wet ingredients, stirring until a dough form. Pat the dough into a ball, wrap in plastic and refrigerate for 1 hour.
4. Pour the filling into a 9X13 baking dish, and with your hands crumble the crust on top of the filling and bake it for around 30 min or until it is golden brown. Let it sit for 15 min, and serve it warm.
5. We like to pair with some coconut whipped cream, yogurt, or some ice cream!
