Fatty Collard Greens
How about some southern #collardgreens dish to smooth it out the week? We are all for it.
Collard Greens are #inseason the whole year here in #california , so why not play with it as much as we can?!
This Fatty Collard Greens can be eaten solo, you can mix with some eggs for powerful scrambled eggs, mixed into some quinoa and black beans for a nice bowl, in some tacos, can be turned into a creamy sauce for a nice dense pasta day… so many ways to enjoy it!!!
Ingredients:
5 thick #bacon strips or 10 thin strips, diced
1 lb collard greens mix
1 cup #stock or #broth
½ tsp pepper
½ tsp ground #sage (optional)
Directions:
1. Heat a large skillet over medium-high heat, add the bacon and let it slightly get brown, and add the collard greens, pepper, and sage (if using). Sauté for about 3-4 minutes.
2. Add the broth and let it simmer for 2-3 minutes, or until most of the liquid evaporates.
