How do you all feel about a bowl that is full of flavors, has a crazy amount of health benefits and that can please the whole family?
We love it!
That’s how we feel about #Dahl , this Indian inspired dish brings a lot to the table. It is pack with #antioxidants #healthyfats #plantbasedproteins and is extremely #tasty !
Ohhh and for those that like #camping , you can make it a few days prior to the trip, freeze it, and have it at the #campground . We just went camping this past weekend and had it for one of our dinners, and it was amazing enjoying a bowl of goodness buy the fire under the stars… ready for the recipe?

Ingredients
3 tbsp butter, ghee, or coconut oil for frying
1 or 2 medium onions, chopped
2 garlic cloves, finely chopped or crushed
½ tsp #turmeric
½ tsp ground #cumin
½ tsp mild chili powder or chili flakes, to taste
½ to ¾ inch piece of fresh #ginger, peeled and finely chopped or grated (optional)
1 cup yellow or red lentils, rinsed thoroughly in cold water and drained
Cinnamon stick or ½ tsp ground cinnamon (optional)
1 cup of vegetable stock or water (or a little bit more)
1 cup of coconut milk
Juice of ½ lemon (approx. 2 tbsp) (optional)
1 tbsp chopped cilantro

Directions
– Heat oil of choice in a saucepan, add the onion and fry until soft. Add the garlic and fry for another minute or two, then stir in the powdered spices and the ginger (if using). Add the lentils, the stock and coconut milk, make sure that the liquid is enough to cover the lentils. Bring to a boil, stirring occasionally, then turn down the heat, cover, and simmer for 25 to 30 minutes, continuing to stir occasionally until the lentils are soft but not mushy.
– Remove the cinnamon stick (if using), add the lemon juice and stir well. Sprinkle with the chopped cilantro and serve warm.
