Chocolate Cupcakes (or Cake!)
Now that you checked your pantry and saw you have all the ingredients for the Avocado Chocolate Frosting posted at the previous post, you are wondering what good recipe would be good to the frosting on top???? I have a solution for it and it is a Chocolate Cupcake that can be, also, made into a chocolate cake. These guys are moist and delicious, full of settle spices that bring a lot of nutrients into play. And I bet this will be a great #familyfriendly recipe that everyone can gather in the kitchen and be part of it. All hands-on board!!!
Yield: 8-10 cupcakes or one 8-inch cake
Prep time: 15 min
Total time: 45 min
Ingredients:
2 ½ cups #almondflour
¼ cup #cacaopowder
1 tsp baking soda
½ tsp salt
1/8 tsp #cardamom
¼ tsp #turmeric
¼ tsp #sumac
Small pinch of ground #clove
2 large eggs
¾ cup maple syrup
1 tbsp vanilla extract
Directions:
1. Preheat the oven at 350F, and prepare an 8-inch cake baking dish with parchment paper or line a cupcake baking dish with paper liners.
2. In a med bowl, whisk together the flour, cacao powder, baking soda, salt, cardamom, turmeric, and cloves. In a large bowl, whisk the eggs, maple syrup, and vanilla extract. Little by little, add the dry ingredients to the wet, stirring until a smooth batter is formed.
3. Pour the batter into the cake pan or pour ¼ cup of batter to the cupcake baking dish.
4. Bake the cake for about 15 min and the cupcakes for about 20 min, or until a toothpick comes out clean.
