Blueberry Spinach Popsicles

BLUEBERRY SPINACH POPSICLES!

Any parent that has tried to hide veggies in their kids’ food knows that color is key. In our blueberry popsicles, we found the right way to get in some fresh spinach (high in iron, magnesium, vitamins B6, B9, C, E, and K, folic acid and CAROTENOIDS) AND maybe even some goat milk! Just blend all of the ingredients below and freeze in your favorite molds…

Ingredients:
– 1 C (1/2 pint) blueberries
– 1/2 C goat milk or coconut cream
– 3 tbsp maple syrup (or 5 tbsp if using goat milk)
– 1 1/2 C fresh spinach, unpacked
– Squeeze of lemon
– 1 pinch salt
– Water to dilute to desired consistency

Optional additions:
* Heavy pinch cinnamon
* Chia seeds (1-2 tsp)
* Ground flax (2 tsp)

These yummy babies are sure to be on summer rotation.
