BBQ Bacon-wrapped Scallops

On Monday, we told you we are going to bring it with the delish ideas for Fathers’ Day. And here you are ;)))

Cue Bacon-wrapped Scallops, an easy way to get nervous-system good fats, thyroid-loving iodine, Omega-3 fatty acids, B12, calcium and iron (not to mention a whole lot of wonderful protein).

Added bonus: this is a totally recipe that the kids will love to help make!

BBQ Bacon-y Scallops

Ingredients
4 slices bacon, sliced in half lengthwise
1 lb scallops (about 8)
2-4 wooden skewers, soaked for about 20 min
Salt & pepper, to taste
½ cup ghee or refined coconut oil
3 cloves garlic, minced
½ tsp dried oregano
½ tsp dried basil
½ tsp crushed pepper flakes (optional)
2 tbsp chopped fresh parsley leaves

Directions
* Preheat grill on medium.
* Wrap each scallop with bacon slice and skewer on seam to seal. Add salt & pepper to taste.
* Brush with small amount of ghee and place on grill, grilling each side for 2-3 minutes.
* In a small sauce pan on grill, add remaining ingredients except parsley. Melt down and cook until scallops are done.
* Plate scallops and top with sauce. Top with parsley.
* Serve immediately.
